Lahanosalata me Karoto (Cabbage and Carrot salad)

This cabbage and carrot salad is so simple but yet so delicious.  This is a very classic winter salad you will find in restaurants in Greece throughout winter till spring using just a few ingredients.

This is a very easy salad to make, especially if you have a food processor with a salad attachment or a salad shredder, you can finely shred the vegetables in no time,  otherwise you have to finely cut the cabbage by hand and grate the carrots.  It can be stored in the refrigerator in an air tight container, for 3 – 4 days but without adding the olive oil.

Cabbage salad goes with practically with everything, especially with meat or  fish.  You can substitute white cabbage with purple cabbage and if you like to make it even healthier, I have made another salad with more antioxidant ingredients.

The classic salad dressing for this salad is olive oil and lemon juice or vinegar.  However, I love adding some mustard and honey in the dressing as well.

Lahanosalata me Karoto (Cabbage and Carrot Salad)

Preparation time:  30 minutes

Serves: 6

Ingredients:

  • 4 – 5 cups of cabbage, finely chopped
  • 3 medium carrots, grated

Salad dressing:

  • 4 tbsp extra virgin olive oil
  • 1/4 cup lemon juice
  • 1 tsp lemon zest
  • Salt (at will)
  • Black pepper (optional)
  • 1 tsp mild mustard
  • 1 tsp thyme honey

Second alternative:

  • 4 cups shredded cabbage, preferably purple
  • 3 carrots, grated
  • 1 small red onion, finely chopped
  • 1 cup celery, finely chopped
  • 1 tbsp parsley, finely chopped
  • 4 tbsp pomegranate seeds
  • 1/2 cup walnuts, coarsely chopped
  • 1 tbsp black Corinthian raisins or goji berries

Directions:

  1. Finely cut the cabbage head into fine, thin strips and then cut them into smaller pieces.
  2. Add the grated carrot, celery, onion, parsley, pomegranate, walnuts and raisins.
  3. Put all the salad dressing ingredients in a bowl and mix with a spoon.
  4. Pour over the salad and mix.
  5. Refrigerate for half an hour before serving.
