A new Spinach Salad

Every Tuesday there is a “Laiki agora” (farmers’ market) near my house so when I went last week, it was not in my plans to buy spinach but then I saw a stall with really nice and tender spinach. I bought some spinach to make spanakopita and when I washed the spinach, I separated and kept aside all the small tender leaves to make a salad and pesto.

In the salad dressing  I used some of the home made pesto I made.

It was delicious.

Spinach salad with eggs and red sweet roasted peppers


Serves:  4 – 6
Ingredients:

  • 4 lean slices of bacon (when on diet I use smoked turkey)
    8 cups of baby spinach
  • 1 – 2 green onions, finely chopped
  • 1 – 2 roasted Florinis red peppers
    1οο grams feta or graviera
    2 hard boiled eggs, cut into slices
  • 2 tablespoons fresh basil, chopped

Balsamic salad dressing:

  • 1 clove garlic
    1/4 tablespoon salt and freshly ground black pepper
    2 tablespoons wine vinegar
    2 tablespoons olive oil
  • 1 teaspoon Greek honey
  • 1/2 teaspoon Greek oregano
  • 2 tbsp homemade spinach pesto

Directions:

  1. Put all the salad dressing ingredients in a food processor and mix.
  2. In a non stick frying pan saute the bacon, without oil and then place on kitchen paper to absorb any fat.  Cut into small pieces.
  3. Place the spinach, basil, bacon, peppers, cheese and onion in a big bowl.  Add as much salad dressing as you like and toss well. 
  4. Put the eggs on top and serve.

Greek-style Spinach Salad

When it comes to a salad that's not only bursting with vibrant colours but also delivers a tantalizing array of flavoθrs, my Spinach Salad takes the center stage.

Ingredients

  • 8 cups of baby spinach
  • 2 green onions, finely chopped
  • 1 small red onion, cut into slices
  • 1 cup or more various peppers (green, yellow, orange, red) cut into slices
  • 100 grams feta
  • 10 Kalamata olives
  • 4 - 5 gherkins or 1 tablespoon capers
  • 15 cherry tomatoes
  • 1 small cucumber (about ½ cup) cut into slices

Balsamic salad dressing:

  • 1 clove garlic
  • 1/4 tbsp sea salt and freshly ground black pepper
  • 2 tbsp balsamic vinegar
  • 2 tbsp lemon juice
  • 1 tbsp Greek honey
  • 1 tbsp Greek yoghurt
  • 1 tsp mustard, preferably Dijon
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp oregano

Instructions

  1. Put all the salad dressing ingredients in a food processor and mix.

    Place the spinach in a large bowl, add the dressing and mix well to coat.

    Add all the remaining ingredients and toss well.

    Refrigerate for half an hour before serving for all the flavours to mingle.
