I keep a few sheep and have been looking for traditional cheeses to make with their milk next season.  Plus this will make a wonderful gift for my friend (she lives in the states, but her grandparents and cousins are still in Cyprus).  Thank you again!  Now, can you tell me what the type of cheese is I heard about made by shepherds from Crete that curs in a sheep-skin bag?  It seemed to be a quick-cheese as well...</description>
