Easy, cheesy Kourou Snacks!!!

Making phyllo from scratch may be a little bit intimidating, not that it’s difficult to make. However, here is Greece we have a big variety of phyllos, each one different in taste and texture.  Apart from the thin phyllo everyone knows which is used to make baklavas, we have “horiatiko phyllo” which is a phyllo used for pies, we have “sfogliata” which is puff pastry and “kourou” phyllo which is a very flaky phyllo made with butter and yoghurt.  Although I make my own phyllo, there’s nothing wrong using ready made phyllo when there is no time and there are lots of things you can make with it.

These snacks are so easy to make and have such a wonderful flavour.   Any kind of cheese that does not melt can be used and you can flavour them with your favourite spices. I used ready made kourou phyllo but if you wish to make it yourself from scratch, see my Kourou Tyropita.

The recipe is for both sheets of phyllo but you can only use half amount for 1 large baking tin 35 x 40 cm.

 

Easy, cheesy snacks!!!

Preparation time: 10 minutes

Baking time: about 45 minutes

Ingredients

  • 1 packet kourou phyllo (or puff pastry)
  • 1/2 cup Cretan graviera or kefalograviera cheese or halloumi
  • Papprika
  • Garlic Powder
  • Black Pepper
  • a dash of salt, only if graviera is used

Directions

Preheat oven at 180 degrees Centigrade. Line a baking tin with parchment paper.

Sprinkle cheese on the phyllo and season with the remaining ingredients.

Make the phyllo into a roll and cut into 1 cm pieces.

Press with your fingers to shape them and put them on the baking tin.

Bake until they have a nice golden colour. Remove on a wire rack to cool. If you want them to become crispy, leave them in the oven until they cool down.

Hey Ivy I just made these and they are at the moment in the oven for baking, will let you know how it went tommorow, i am having guest, they will be here in less than a hour and i am using halloumi cheese.

Hi Ivy... thank you so much for the award! IT's my first and what a surprise for me. Really made my day after 1 week of coughing, fever and sneezes in my family! The dreadful antibiotics made the food I cooked tasteless but your award made me willingly to complete the medication... hahahha. Your cheesy snack made my tummy growling ... must be very crunchy and delicious indeed!
