I call this soup clean up your fridge soup, as you can use any or all vegetables in the recipe.
The vegan soup is called Hortosoupa and you make it the same way as for the meat soup, without the meat. The vegetables are cut into small pieces and when they are cooked, to make it more hearty and filling, I add a cup of a tiny star shaped pasta, called astraki. Before adding the pasta you can puree the vegetables in a food processor and then cook the pasta.
Kreatosoupa is made with Veal. Veal is often ignored but, it is a very tender and flavourful meat, so for the meat soup, I use 500 grams (1,10 lbs) veal from the muscle.
You can also make the same soup with fish and it is called Psarosoupa (fish soup).
