Fat Chefs or Skinny Gourmets? – Round Up

By • Ιουν 30th, 2008 • Category: Cypriot

Ben and I would like to thank everyone for contributing a lovely creation to our first event «Fat Chefs or Skinny Gourmets?».

The participations were beyond our expectations and we have received wonderful, delicious and most of all healthy recipes, enough to keep us going for the rest of the summer. I am glad that you have not sent only savory recipes but some entries are also desserts as these are also necessary in our nutrition as well.

The entries have been posted chronologically, in the order I received them. Hope I have not forgotten any entry and if I have please let me know, so that I may correct this first thing in the morning.

Voting is now open and you can start voting and tell your friends to vote for you as well.

Strawberries and creamy dessert 0% fat

For 4 cups:

-1 tub (200-50gr) strained Greek yoghurt 0% fat

-1 tub (200-50gr) Quark cheese 0% fat

-1 tsp lemon juice

-unrefined sugar or honey or fructose or agave syrup to taste (I used 2 tbsp jaggery goor)

-1 tsp vanilla

-no sugar strawberry jam (made with grape juice) or berry compote (mixed berries or just strawberries, simmered with a bit of unrefined sugar and cornflour until thick)

-amaretti biscuits

Whisk yoghurt, cheese and lemon juice till they’re fluffy, add vanilla and sweetener of choice and whisk a bit more. In glasses of your choice (see through works best) alternate layers of creamy mixture and fruit, top with a crumbled amaretti and refrigerate. You can also put in the freezer, after an hour or so you have a thick super creamy texture dessert that tastes nothing like 0 fat! (I guess you can leave it longer for an icecream like dessert but I haven’t tried it yet, you can!)

Finally, here is Ben’s entry as well as mine.

Ben, of What’s Cooking, has submitted Collard Greens Wraps

Ivy (that’s me) of Kopiaste… to Greek Hospitality, has submitted Indian Style Chicken

is I was born in Limassol, Cyprus and being married to a Greek, we now live in a small village near Nafplion. I spend most of my time cooking, photographing and publishing my recipes on my blogs Kopiaste (in English and Greek), which I started in August 2007 to pursue my passion in food. I am the author of cookbook "Mint, Cinnamon & Blossom Water, Flavours of Cyprus, Kopiaste!", a compilation of 150 Cypriot family recipes, available on all Amazon stores. The book is also available as an e-book. My new cookbook "Greek Delights" with over 250 recipes is also available on Amazon.
