Healthy Spring Salad

Although I serve salads everyday with our meals, salads is not fully covered in my blog and I know I have to start adding more salads.  I have lots of salads I have not published yet but I always prefer to focus on the main course rather than on a salad.  The salads I make always depend on the ingredients I have at home and make different combinations each time.

This week I had leftover hard boiled eggs from Easter and added them to this delicious salad which I served with turkey burgers.

Myronia (shepherd’s needles – scandix pecten veneris) may not be available in your country but although it adds a characteristic lovely flavour, don’t worry if you don’t have this herb.  Don’t add it at all or if you have fennel fronds, although it’s not a substitute,  you can add some, giving it another lovely flavour.

The salad dressing I used is what we call in Greece “ladolemono” meaning oil and lemon.  The addition of mustard would make it Ladolemono Moustardas.

I have seen in various blogs calling a lemon and oil salad dressing as “Lemon Vinaigrette”.    This is wrong, in my opinion.  Vinaigre in French means vinegar, so you can’t have a vinaigrette using only lemon juice, oil and mustard.

If you are not watching your calaroies, make more of this “Ladolemono moustardas” as it is perfect on top of the turkey burgers as well.

Anoixiatiki Salata (Spring Salad) me Ladolemono Moustardas, Recipe by Ivy

Preparation time: 15 minutes

Serves:3 – 4

Ingredients:

  • 2 cup tender lettuce hearts
  • 1 cup wild rocket
  • 1 cup baby spinach
  • A few sprigs of myronia
  • 4 cherry tomatoes
  • 2 hard boiled eggs, quartered
  • 1 very small red onion, finely chopped
  • 2 spring onion, finely chopped
  • 2 tablespoons parsley, finely chopped
  • 2 tablespoons dill, finely chopped
  • Salt and freshly ground pepper

Ladolemono Moustardas (Lemon-Mustard Salad dressing):

  • 3 tablespoons olive oil
  • 3 tablespoons lemon Juice
  • 1 tablespoon Dijon mustard
  • Salt and freshly ground black pepper
  • Oregano

Directions:

  1. Wash and drain all the vegetables.Coarsely cut the lettuce, spinach, rocket and myronia.Add the remaining ingredients (except the eggs), season with salt and pepper and mix.Decorate with the eggs.
  2. In a bowl add all the salad dressing ingredients and mix with a fork to combine.
  3. Before serving, add as much salad dressing as you like and mix.

On another note, a few days ago I have updated my blogroll.  I am sorry to my friends who were not there all this time but some times I add new friends in my reader and forget to update the blogroll.  I am sorry if you were not included, it was non intentional.  If you are a visitor of my blog and do not see your blog there, please let me know and I will update it immediately.

After my health problems during summer, I have made some resolutions never to stress myself again.  Although in the past I used to regulary visit all the people in my reader, since then I have decided to visit back those who visit my blog.  So, if you visit me, I will visit you back.  I will not be visiting everyday because I cannot catch up the pace of the new bloggers who post once a day but I will visit at least once or twice a week.

This is a light and lovely salad Ivy! Just in time for the warm months when I crave more salads. Congrats on your awards and thanks for passing on to me. It is hard for me to keep up with all the posts in my Google Reader - I once would stress over it - but no more - I am visiting as often as my free time allows. Enjoy the rest of the weekend!
